Ingredients
- 1 can corn (rinsed and drained)
- 1 can black beans (rinsed and drained)
- 3-4 c chopped chicken
- 2 cartons (32 oz) chicken stock
- 2 c water
- 1/2 can tomato paste (that little can, not sure the oz)
- 1 tbsp onion powder
- 1 tsp salt
- 1/2 tsp cumin
- 1 tsp chili powder OR I used taco seasoning because I was out of chili powder
- Lime juice (squeezed from 1/2 to 1 whole lime)
- 1/4 c chopped cilantro
- 3-4 cloves of garlic, pressed
- 4-5 corn tortillas cut into strips (add these after the soup has simmered for 20 minutes)
Directions
- Combine the following ingredients. Bring to a boil simmer about 20 minutes.
- Add tortilla strips after the soup has simmered for 20 minutes.
Top with…
- Cheese
- Sour Cream
- Chopped green onion
- Sliced avocado
You could also experiment with adding the following ingredients…
- Chopped zucchini and squash
- Diced chilis or a can of Rotel
- Chopped onion
- Brown rice to add a bit of bulk
