Ingredients

  • 1 rotisserie chicken meat pulled and chopped
  • 1 bag fresh (not frozen) cauliflower rice (about 16 oz)
  • 1 jar salsa verde (about 12 oz)
  • 1 bag shredded cheddar cheese
  • 1/2 – 3/4 cup greek yogurt or mayo
  • 1 tsp salt

Directions

  • Spray crock pot
  • Mix all ingredients in a bowl (save a little cheese for the top)
  • Pour into crockpot
  • Top with remaining cheese
  • Cook on high 3 hours
